Chocolate mousse: fancy, delicious and surprisingly straightforward (GF)

With no baking required, this recipe for chocolate mousse is quick, delicious and hard to get wrong. You can prepare it ahead of time which is perfect if you’re having friends round, and with a name like mousse, it has a definite air of fanciness about it.

What you’ll need

80g dark chocolate
2 eggs
25g melted butter
2 tbsp caster sugar
1 tbsp Baileys (optional)

What to do

Begin by melting your chocolate – due to a particularly memorable incident involving chocolate, a microwave and a rather distracted mood on my part, I now always melt mine in a bowl over a saucepan of boiling water.

Once this phase change is complete, separate your two eggs leaving the whites in their own bowl and adding
the yolks to your chocolate.
Add the melted butter to this chocolate-egg mixture and stir by hand.

In a separate bowl, whip the egg whites until soft peaks form, then add your sugar and continue beating until your peaks are stiff.

Add the Bailey’s to your chocolate mixture (if you’re going alcoholic) and fold in the egg whites. Stir by hand until just incorporated.

Pour your mousse into four separate pots and pop into the fridge to chill until set.
